There are two types of ramen: salt and soy sauce. The soup is based on a clear soup stock made with Aichi prefecture's brand-name chicken "Kinsoudori" and over 20 types of dried foods such as kelp, dried sardines, and scallops, and the soy sauce is made in Wakayama prefecture. Kaeshi is a blend of four types of salt, including ``Kaneiwa soy sauce,'' and five types of salt, including ``Hoshi no Suna Salt'' from Kagoshima Prefecture and ``Aoi Umi'' from Okinawa Prefecture.
