Yakiuo is a dish that was created at Yakiuo Restaurant Yoiyoi in Hiroshima. It is characterized by skewering fresh fish fillets and slowly grilling them. In recent years, it has been featured on TV and social media more and more, and its recognition is rapidly increasing. The restaurant was opened independently in 2023 by the owner who trained as a ``yoisui'' chef. Every day, carefully selected fish are skewered one by one and grilled over Bincho charcoal until plump and fragrant. The store is tucked away in a back alley, with warm lighting and a calm atmosphere where you can enjoy seasonal cuisine at your leisure.
