A combination of clear soup made with pork and chicken bones carefully cooked over low heat and fine curly noodles that go down smoothly. Traditional ``Chinese soba noodles'' with a slight scent of dried sardines; ``Salt ramen'' with a refreshing taste using seaweed salt from Sasagawa Nagare; ``Miso ramen'' with the flavor of Echigo miso and stir-fried vegetables; ``Tandan noodles'' with the richness and spiciness of deep-roasted sesame seeds and homemade chili oil.
