The gadfly fish pickled in sake lees is ready. When baked, it has a fruity and aromatic flavor that will whet your appetite. You'll be surprised by its rich aroma and crisp texture. Ethyl caproate, a unique ingredient abundantly contained in Daiginjo, has a gorgeous apple-like aroma called ``Ginjo-ka'', which has a relaxing effect and a very pleasant scent.
