Doteyaki is a dish made by simmering beef tendon for a long time in white miso, mirin, dashi, and other ingredients. It is also called "dote-ni" or "dote." Because it uses white miso, it has a mellow flavor. Depending on the restaurant, it is served on a skewer.

Other regions also have stewed dishes, but the ingredients and seasonings used are different. Osaka's doteyaki uses white miso, Tokyo's motsuni uses red miso, and Nagoya's doteyaki uses Hatcho miso. Doteyaki also uses only beef tendon, but motsuni uses ingredients other than beef tendon.

How to make Doteyaki

To make doteyaki, first put miso on the inside of the rim of the iron pot. The miso is piled up like a mound, hence the name "doteyaki."

Next, the beef tendons that have been parboiled and skimmed off are grilled in the center of the pot. The meat is simmered over low heat for another 2-3 hours in the miso that has dissolved from the heat, and when it is tender, it is done. Some restaurants also simmer konnyaku together. Others serve it topped with chopped green onions or shichimi pepper. It may also be served with grated mustard.

The way doteyaki is made and the taste varies depending on the restaurant. Some restaurants use a large iron plate instead of an iron pan, and make it by adding skewered beef tendons and miso paste.

One of Sakunosuke Oda's works is a novel called "Meoto Zenzai," which is set in Osaka from the late Taisho to early Showa periods. Since the novel mentions "the two-sen doteyaki at the night market," it is believed that doteyaki may have originated from food stalls.

There is also a direct limousine bus to Universal Studios Japan. The fare is 940 yen for adults and 470 yen for children. It takes about 40 minutes to get to Universal Studios Japan.
