When it comes to okonomiyaki, Hiroshima and Osaka are famous. However, even though they have the same name, the way they are made is different, so the texture and taste are different.

Hiroshima okonomiyaki is made by cooking a thin crepe-like batter on a hot plate, topped with a generous layer of shredded cabbage, bean sprouts, pork, noodles, and egg, and then served with a rich okonomiyaki sauce.

Osaka okonomiyaki is called "mixed okonomiyaki" because the ingredients are mixed into the batter and then cooked, while Hiroshima okonomiyaki is called "layered okonomiyaki" because the ingredients are layered and then cooked.

A mountain of cabbage is sandwiched between the batter and the hot plate and steamed, allowing you to fully enjoy the flavor of the vegetables. You can choose from a variety of toppings to suit your taste, including seafood such as shrimp and scallops, cheese, mochi, udon, and soba.

There are many okonomiyaki restaurants in Hiroshima Prefecture, and each one has its own unique flavor and cooking method, so it's fun to find your favorite one.
